Egg Meatloaf (Chả Trứng)

Vietnamese egg meatloaf is steamed ground pork with eggs.  It is an accompaniment to a dish that you find in Vietnamese restaurants.

Rice (or broken rice) with shredded pork skin, grilled pork, and Vietnamese egg meatloaf is served with fish sauce (nước chắm) and a bowl of broth.  In Vietnamese, it’s called “Cơm Bì Chả Thịt Nướng” or “Cơm Tắm Bì Chả Thịt Nướng”.  The difference between the two is the rice used. Cơm is regular rice. Cơm tắm is broken rice.  I prefer the broken rice.

Egg Meatloaf (Chả Trứng)

  • 1 lb ground pork
  • 0.3 oz bean thread noodles
  • 1/4 cup dried shredded black fungus
  • 9 eggs
  • 2 tsp salt
  • 3 tsp sugar
  • 1 tsp ground black pepper
  • 1/8 tsp MSG (optional)


  1. In a small bowl, soak the bean threads in warm water for 3 minutes.  Drain, cut into small threads (~1 inch), and set aside.

  2. In a separate small bowl, soak the shredded black fungus in warm water for five minutes.  Drain, cut into small pieces, and set aside.

  3. Separate three of the nine eggs.

  4. Beat the three egg yolks and set aside.

  5. In a large bowl, mix the ground beef with the six eggs and three separated egg whites.

  6. Season the mixture with salt, sugar, black pepper, and MSG (if using).

  7. Add the bean threads and black fungus and mix evenly.

  8. In a large pie dish, place a piece of plastic wrap to cover.  This is to prevent the meatloaf from sticking to the dish.  It will help with removal of the meatloaf.

  9. In a large pot, add about 4 cups of water and place a trivet in the pot.  Use a trivet that is about an inch high.

  10. Spread the meatloaf mixture evenly into the baking dish and place it on the trivet in the pot.

  11. Put the lid on the pot and turn the burner to medium-high.

  12. Let the meatloaf cook for about twenty minutes.

  13. Lift the lid and evenly spread the beaten egg yolks.  

  14. Cook for another 5-10 minutes, uncovered.

Recipe Notes

Serve with rice, shredded pork skin, grilled pork, and fish sauce (nước chắm. Lettuce, tomatoes, and cucumbers are great with this.
